COLLECTION OF OLIVES
ARBEQUINA OLIVE
The production of extra virgin olive oil of the highest quality starts right from the tree. It all starts in the olive groves located in the vicinity of the mill. Here the trees grow in a predominantly dry climate, which implies a lower output. Today more and more farmers are trying to apply the principles of organic farming, changing their cultivation methods and respecting the tree growth and fruit without adding chemicals. This allows us to have a small production of organic oil. The optimal time for collecting the olives in their degree of maturity, would be between the months of December and January. However, to get the taste and organoleptic characteristics of our oil, the harvest begins a little earlier so that we take a certain amount of green olives to give new colors to the oil. The collection process is manual, by shaking the olives from the trees to the ground before the time they fall on their own. On the ground nets are extended to collect the olives until finally they are deposited into the boxes and transferred to the mill. Painstaking effort is taken to move the olives as quickly as possible to the mill, in order to assure a lower acidity.
The olives arrive at the mill where they are weighed, separated from the leaf through natural methods and then the process of oil production begins. They are moved to the top of the mill stones and fall progressively into the mechanism. A homogeneous mass is formed from the flesh of the olive. The stone of the olive is already partly separated and not affected by pressure from the presses. This homogeneous mass is then passed through a rotating machine, where the first drops of oil flow out. Finally, this mass is manually placed inside the baskets. These are stacked one upon the other forming a tower and placed in the press. The oil is extracted by pressure from the mass inside the baskets along with water from the olive, then left to settle in the containers where the two layers separate by the difference in density and the oil is then stored in optimal conditions.

The Arbequina olive, which takes its name from the neighboring municipality of Arbeca (13 km) is the star of our oil. They are small round olives with a fruity aroma, very soft and delicate. The oil is smooth, soft, light and even with some almond sweetness that brings through more exotic notes. However, if the olive is picked early, when less ripe, it can be slightly bitter, which changes the organoleptic qualities of the resulting oil a bit. To preserve these properties extreme care must be taken throughout the process in to minimize the risk of oxidation. For this reason sources of heat and light must always be avoided.

It all began in 1895 and has since worked with the production methods based on cold stone milling, without any additives and using pressure mats on columns. Our tradition has led us to maintain traditional systems yet at the same time we try to adapt to the improvements that new knowledge can bring us. For this reason, besides the extra virgin olive oil that we have always produced, we have embarked on a new initiative to maximize production of organic extra virgin olive oil. This change involves adaptation not only in olive oil production, but in the whole process from the tree to the mill. With this innovation we try to do our bit in respecting our environment.
The mill is located in the municipality of Sant Marti de Malda in the county of Urgell (Lleida province), surrounded by the districts of Les Garrigues and La Conca de Barberà. It is an area with a long tradition of olive oil production.. The olive groves in the surrounding area give the landscape a silver tone that is accentuated by the frequent breeze, typical in this area.
